Aubergine Soup

Serves 4

Ingredients
1 aubergine (chopped)
1 onion (chopped)
300 grams potatoes (chopped)
1 tablespoon vegetable oil
1 bay leaf
1 tablespoon oregano (chopped)
3 tablespoon milk
925ml vegetable stock
Pepper and salt

Direction
Fry the onion in the oil for few minutes.
Add the aubergine, bay leaf, oregano, potatoes and pepper and salt.
Add the stock and bring to the  boil and simmer for about 40 minutes.
Remove the soup from heat and let it cool.
Pour the soup to the blender and blend for 2 minutes.
Add milk then reheat gently.
Serve hot.
